This cheese with protected denomination of origin (DOP) Mahón-Menorca is made with pasteurized cow’s milk. Distinctive and unmistakable in appearance, the firm rind is orange and easy to cut, the cheese is a yellowish ivory color and has a number of tiny eyes distributed irregularly. The flavor and dairy aromas are more evolved, with certain reminiscences of butter and toasted nuts (hazelnuts), of medium palate presence.
Subjected to an average maturation process from 2 to 5 months.
Presentation formats: Large whole pieces (3.4 kg aprox.) And whole small pieces (0.9 kg aprox.) Or portioned in quarters or eighths of a piece. Vacuum packed or wrapped in waxed paper (whole pieces).
