This cheese with protected denomination of origin (DOP) Mahón-Menorca is elaborated with raw cow’s milk. A delight for cheese lovers, its texture is much firmer and harder, less elastic, even brittle, becoming flaky when cut in advanced stages of curation. The taste and aromas are very evolved, with a long palate presence. It suggests notes of aged wood and tanned leather with a spicy flavor. When the curation exceeds the year, it is then called Old cheese and the aromas and flavors are accentuated much more. Subjected to a long maturation process, above 5 months.
Add presentation formats: Large pieces (2.4 kg aprox.) Or portions in quarters or eighths of a piece. Vacuum packed or wrapped in waxed paper (whole pieces).
