Sant Patrici cheese
The pillars of our production process are the utensils, techniques and traditions that we maintain untouched while adapting to the technological evolutions. The Mahón – Menorca Cheese DOP from Sant Patrici is made with cow’s milk. Its traditional form is a quadrangular shape with smooth rounded edges. Its weight varies between 1 and 4 kilograms and can be discovered in different maturity stages: TIERNO (young cheese), when its maturation is under 2 months, SEMICURADO (semi-aged cheese) when its maturation is above 2 months and CURADO (aged cheese) when it is cured for more than 5 months.
To develop its aromas, the Mahón – Menorca Cheese DOP from Sant Patrici is refined in aging chambers for a minimum of 20 days and up to 1 year. During the ripening stages, the color of this cheese ranges from ivory to dark brown. It also highlights the degree of intensity of the flavor; slightly salty, acidic and somewhat spicy characteristic that are personal to this denomination.
This process of elaboration would not be possible without the daily dedication of the master cheesemaker, with his knowledge, love and meticulous eye, he carefully develops a cheese with a unique flavor.
